This is the name of the dish we have chosen for you; Yoghurt Cantuccini Dessert with Peaches.
500 g cream yoghurt
200 g Cantuccini – Italian almond biscuits, available in the supermarket
80 g powdered sugar – sieved
60 g of butter
1 packet of vanilla sugar
2 tablespoons of lemon juice, freshly squeezed
1 tin (420 g net weight) peaches, cut into small cubes – Alternatively depending on the season: apricots
First you put the cantuccini in a freezer bag and crumble it roughly with a rolling pin.
Yoghurt Cantuccini Dessert with Peaches
Melt the butter in a pan and add the coarse Cantuccini crumbs, sprinkle the packet of vanilla sugar over it and brown everything nicely. But do not let it turn brown, do not let it out of sight. Let the Cantuccini crumbs cool.
You drain the peaches well in a sieve and cut them into small cubes. Now you put the cream yoghurt and the lemon juice in a bowl, sieve the powdered sugar over it and mix everything with the whisk of the hand mixer or the food processor smooth.
If the Cantuccini crumbs have not cooled down yet, you should first park the yoghurt mass in the fridge for a short while. Now you put in your dessert glasses. The bottom layer is a good layer of Cantuccini crumbs with about 1.5 cm. Now spread a layer of yoghurt on top and then spread the peach cubes.
Now add a layer of yoghurt mass to it, spread the remaining Cantuccini crumbs on it. If you like, you can still decorate with peach slices and mint. I wish you and your guests a good appetite.
