Cut the onion very small and fry in the fat. Add the barley and add the vegetable broth after about 3 minutes. Cover and simmer for 10-15 minutes.
In the meantime, wash carrots, celery and leeks and dice them very small. Put the vegetables with the lemon juice in the pot and simmer again for about 15 minutes until the pearl barley is tender. Season with salt and pepper and serve with a dollop of creme fraiche.
As a vegan recipe, take oil to saute and leave off creme fraiche.
