Cut the onion into small pieces. Carrot and zucchini cut into large cubes, as well as the peppers.
Heat the oil in a large saucepan and let the onions and garlic glassy.
Then add the carrot cubes, saute and cook for about 5 minutes with the lid closed at medium heat. Add the diced tomatoes and fold in the rest of the vegetables.
Season with broth and herbs. Cook with lid closed to the desired bite resistance.
If this is not so good for you, you can add some water.
It goes well with potatoes or potato bread.
