Heat the oil in a saucepan. Fry the chopped onions and the pressed garlic cloves for 2 minutes. Add the drained chickpeas and the curry powder and saute briefly. Douse everything with the vegetable broth and simmer for 5 minutes.
Add the coconut milk and shake the thawed and well-expressed spinach with scissors. Mix everything well and simmer for a further 5 minutes over low heat. If necessary, season the curry with salt and pepper.
Basmati rice tastes especially good for this.
