This is the name of the dish we have chosen for you; Vegan spinach and chickpea curry


4 tbspvegetable oil
2Onion (n)
2Garlic cloves)
1 gr. Can / nChickpeas
2 tbspcurry powder
200 mlvegetable stock
200 gcoconut milk
500 gLeaf spinach, TK
salt and pepper

Heat the oil in a saucepan. Fry the chopped onions and the pressed garlic cloves for 2 minutes. Add the drained chickpeas and the curry powder and saute briefly. Douse everything with the vegetable broth and simmer for 5 minutes.

Add the coconut milk and shake the thawed and well-expressed spinach with scissors. Mix everything well and simmer for a further 5 minutes over low heat. If necessary, season the curry with salt and pepper.

Basmati rice tastes especially good for this.
