Put the flour in a large bowl and press a bowl in the middle. The yeast is slightly crumbled and added to the trough. Put the milk in a saucepan and heat. Add Alsan to the milk and melt in it. The milk should be warmed only slightly, not hot. Pour about a quarter of the milk into the bowl and mix with the yeast. Cover the mixture with a little flour and let rest for 10 minutes.
Then add the remaining milk, sugar and vanilla sugar as well as salt and bitter almond flavor. Knead everything with a mixer or hands for five minutes. The dough should have come off the bowl and not stick to your fingers. Then place the dish with the dough in a warm place for one hour, eg. B. to the heater. The dough should then be twice the size.
In the meantime, the jam is pressed through a sieve, so that it is beautifully velvety. In addition, so no cores etc. back. If that does not bother you, you can omit this step as well. The sieve should not be too fine, as sieving can be very tedious.
When the dough is ready, it must be divided into 16 equal parts. You should be careful that the dough balls get no wrinkles. These are difficult to get out of the balls and ensure that the dough during baking easily tears and thus does not get a perfect shape.
The dough balls should rest again for 10 to 15 minutes.
In time, the fat / oil can be heated. However, the fat should not be too hot, because the donuts are otherwise quickly dark, but inside are not yet through. The temperature should be around 160 – 180 ° C.
The donuts are then fried first from one side, then from the other. You should always avoid turning the donuts, otherwise they will not heat up properly.
After frying, the donuts come on a plate laid out with paper towels. Once the donuts have cooled off a bit, they can be filled with jam. For this purpose, a plastic piping bag with appropriate, pointed attachment can be used. As with the bought donuts, the jam is filled from the side. For this purpose, pierce the tip to the middle and carefully circling so that there is some space for the jam in the donut. Make sure that the hole on the side does not get too big. Then after feeling the jam fill in the donuts.
Finally, turn the donuts into sugar.
