It’s time for Savory Vegan Pancake, which is very tasty with autumn vegetables!

Bake the pancakes and set aside. Note diameter: they should fit into your casserole dish / cake pan if possible.

Heat some fat in a pan and fry the onion cubes with garlic. Add enough water until the soil is lightly covered. Gradually add the vegetables according to the cooking time (ie firstly potatoes / sweet potatoes / carrots, then after a few minutes zucchini / peppers ..). Add spices, tomato sauce and vegetable bouillon powder to the pan with the first batch of vegetables. Always add water as needed, so that everything is sufficiently “moist” and does not burn. Cook for about 10 minutes on a low flame with the lid closed, stirring occasionally. Then add beans and corn and heat for another 5 minutes.

For the sauce, first grind the cashews into flour in a blender. Then add the vegetable milk with mustard, soy sauce, lemon and spices and mix again briefly.

Melt the fat in a small saucepan (not too hot!), Stir in the flour and sauté for about 2 minutes, then remove from the heat. While stirring constantly, preferably with a whisk, slowly add the liquid until it makes a creamy sauce and then put the pot back on the hot plate.

Keep stirring, the whole thing continues to thicken. Always add small quantities of liquid. If the milk mixture is not sufficient, you can also pour some milk pure, in an emergency tuts also water. The main thing, the sauce is pretty viscous in the end. Stir in the yeast flakes and bring to a boil while stirring.

Preheat the oven to 200 ° C. Layer into a (in the best case round) shape: pancake-vegetable-mass-sauce, pancake-vegetable-mass-sauce, until all is used up. On the top pancakes only gravy, or, if you want to use vegan “grated cheese”, you mix this with the last remaining sauce before you cover the pancake with it.

Now bake the artwork in the oven and on a medium rail until the top coat tans something (or hunger wins). Took 10 to 15 minutes with me.

One more note: my recipes are meant to serve as inspiration. Familiar with your feeling while cooking. If it is too thick: add some liquid, if it is too bland, a little more spice. If it is too spicy: add some vegetable cream, if it is too hard, extend the cooking time. And if it’s too soft – act as if it had to be like that, or puree everything and serve it as cream soup.
