Hollow out the pumpkin and cut into small pieces. Core the apple and cut into small pieces. Fry both with 1 tbsp olive oil in the pan for 2 – 3 minutes. Then deglaze with the orange juice and stew with lid for 10 minutes at low heat.
Then pour the mixture into a container and puree with the blender. Put the puree back into the pan and stir in the oats on low heat. Turn off the heat and let it swell with lid for 5 minutes. The mass should then have a firmer consistency.
Press the garlic to the mixture and season with salt and pepper. Shape the patties and bread them, so turn them over in a bowl filled with flour / breadcrumbs.
Put some oil in the pan and fry the patties crispy on both sides. Be careful when turning.
We ate them with tomatoes, lettuce and a spoonful of yogurt on pre-warmed XXL burger rolls. Then of course it is no longer vegan.
