Vegan, suitable for fondants and produced very quickly. You only need ingredients that you are sure to have at home.

Mix the sugar with 30 ml of water and bring to the boil until the sugar has dissolved. Then remove from heat and let cool for a few minutes.
Stir the cornstarch with 70 ml of water until no lumps are left and stir into the sugar syrup. Boil again on the stove with constant stirring for about 1 – 2 minutes, until the mass thickens, becomes clearer and has a gelatinous consistency. Let cool, done.
The gel is of almost clear consistency and can be dyed after cooling with gel colors. It is about 5 – 7 days in the refrigerator, but it is lumpy, then again briefly heated and stirred well until it has the usual consistency. Therefore, I recommend to always make it fresh and not to produce in stock, especially since the production does not even take 10 minutes time.
Applied to the cake, the gel dries and becomes much firmer. Please also keep in mind that your kitchen scale may weigh inaccurately small quantities, such as the cornflour. If your piping gel is too soft / liquid, simply reduce or increase the amount of 70 ml of water stated in the recipe if it is too firm.
