100 g chia seeds
500 ml coconut milk (not the canned)
Mark a vanilla pod or vanilla powder
400 g of yoghurt (for example soy or almond yoghurt)
200 g (frozen) raspberries
Berries and grated coconut for decoration
Coconut Vanilla Chia Pudding
Combine chia seeds, coconut milk and vanilla and mix well, preferably with a whisk. Let rest for 2 minutes and mix again. Now put in the fridge and stir again after half an hour to avoid lumps.
It is best to soak the chi pudding for a few hours or overnight. Personally, I let him but only 1-2 hours pull, which also gives a nice consistency, as long as you stir well. In the meantime, mix the berries with the yoghurt.
Put the chia pudding in the jars and then add the yoghurt. Serve with fresh berries and grated coconut.
