1 large cauliflower
150 ml of rice milk
6 leaves sage
1 tbsp anise
3 tbsp olive oil
Preheat vegetable oil to 180 ° C for searing oven. Rub off half of the tangerines. Cut sage leaves into fine strips. Remove the cauliflower leaves and cut two thick steaks from the center of the cauliflower. Cut remaining cauliflower into cubes. Juicing tangerines. Add rubbing to the juice.
Put the diced cauliflower, rice milk and cloves in a small saucepan. Approximately Simmer for 15 minutes until the cauliflower is soft. Remove cloves and finely puree the cauliflower with a hand blender. Season with salt. Stir in olive oil and keep warm.
Meanwhile, heat some vegetable oil in a large ovenproof pan. Fry the cauliflower steaks on medium heat for about 4 – 6 minutes on each side until they get a nice tan. Sprinkle with sage and anise. Put the pan in the preheated oven and bake at 180 ° C for about 15 – 20 minutes.
Serve cauliflower steaks on a bed of cauliflower puree and drizzle with tangerine juice.
