This is the name of the dish we have chosen for you; Cauliflower Curry.
2 onions, diced
1 thumb-sized piece of ginger – or more chopped
1 cauliflower, (about 600-900 g) cleaned, divided into small florets – the smaller, the faster it is even.
2 small tins of tomato pieces
3 teaspoons curry powder
Coconut oil or frying fat to braise. Salt, pepper, parsley for seasoning. Fry the onions with ginger in oil.
When the onions are tender add the cauliflower and tomatoes. Stir in curry powder and add 250 ml of water, stir and bring to a boil. Simmer on a low heat until the cauliflower is cooked (about 20-30 min). Season with salt, pepper and chopped parsley.
