Broccoli – potato soup

Ingredients

10 small onesPotato (n)
150 gbroccoli
1 m. -LargeOnion (n)
1 tbspoil
1 cubeVegetable broth (eg from the health food store)
1 tbspmarjoram
1 pinchGround caraway
1 teaspoonGarlic, ground
n. B.salt and pepper
750 mlwater
2 tbspCream – Substitute (Alpro soja Couisine)

Peel potatoes, cut into small cubes. Cut broccoli into small pieces. Peel the onion and cut into small pieces.

Sauté onions in a pan in hot oil for 4 minutes over medium heat. Then add water and add potatoes and broccoli. Boil. Add a cube of vegetable stock and, if necessary, salt. Cook on medium heat for 10 minutes. Then add marjoram, cumin, garlic, pepper and the cream substitute. Approximately Cook for 10-15 minutes, stirring often. At the end puree everything with a hand blender.

Note: Vegetable bouillon cubes from Knorr or Maggi are not vegan!
