Barley Soup with Smoked Meat

I think barley is a forgotten crop. It used to be used many times, today it fights a real shadowy existence in the kitchen without any justification. It is very rich in protein and magnesium and contains a lot of fiber, but it is not gluten-free – people with an intolerance should therefore forego this great soup ingredient and dodge rice or millet.

Ingredients

a tea cup barley
1 clove of garlic
300 g smoked comb
1 bunch of birch trees
3/4 liter of water
1 bay leaf
vegetable broth
pepper
1/2 bunch of parsley

Barley Soup with Smoked Meat

Preparation

Peel the garlic clove and bring to a boil with the barley barley and one liter of water. Then gently simmer for about 25 minutes.

Cut the smoked comb  into small cubes. Wash the vegetables and also dice or cut a small strip. Boil the vegetable broth in a pot and add the meat, carrots, celery, leek and bay leaf. After five minutes of cooking, season with vegetable stock and pepper.

Drain the barley barley and cook in the soup for five minutes. Then spread everything on four bowls, garnish with parsley and serve.
